i'm looking to eventually throw out and slowly upgrade my kitchen supplies... what is everyone's goto kitchen tools they swear by (e.g. cutting knives, kamado tools, etc...)

For knives, buy local; get a Grohlman chef's knife and a paring knife and you're good to go for any situation. World-class knives made in Pictou that have great balance and are made from top-quality steel. Pricey, but if you love cooking you won't regret it.

Cooked a half dozen pizzas for family this evening. This one had the bacon and sausage I smoked yesterday as toppings. Need to move the Kamado up on the main deck so I've got better light. Grilling in the dark sucks.

When cooking the pizzas on the Kamado last night, I brought out my 1000w halogen lamp that I use for detailing. :D

The next time that a buddy comes over I plan on getting them to help me move the Kamado into the garage for the winter.

Wusthof are my go to knives, but more important than a brand is to make sure they are sharp, spend the 10 bucks a year and get it done by a pro. I also recommend a good mortar and pestle ( mine's granite and hold about a 2 quarts) and decent pots and pans, cast iron, copper and non stick really all depends on how much you want to spend. Lastly a good thermometer, I have a few by thermoworks. Absolute must have. I think that someone has done a few group buys with them here. Just my 2 cents.

So I scored some sliced pork belly from the SS last week for like 30 cents a pack X 3, about 750g worth. I did a dry brine from the Charcuterie book, smoked really low with Apple wood. I'll east this over the week and use it in recipes. Fuck it's good!
