"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Control Panel (Still needs a little work)
And soon to be fabricated manway and chimney on kettle.
Working on modifying a tank identical to the mashtun to make it a 600L total sealed fermenter with a 20" manway. If it works out good I will do it to the other tank and build a bigger mashtun. Going to keep picking away at this.

Having my plate chiller and pump mounted on the same unit got to be a pain in the ass. Took the plate chiller off this evening and chopped the box down a bit. Also added a splash guard for the pump motor.

Not so much a brewing picture. Made my first attempt at rinsing yeast yesterday. Grabbed a bit of trub but I think I got enough yeast for a decent starter.

Haha, yeah, can't help the heat. No thermostat in the apartment and I don't pay for it. Beats freezing but it's no good for fermenting.

I'd love that. Becky likes the place to be a sauna so we are always playing a game of "up & down" with the thermostat.
