Going to have to give this one a try. Sounds like a great cold, lazy weekend day meal.

Smoked porchetta is insanely good with mashed potatoes. Works really well with loin as well. Slow cook till 150, then slam with heat till 160 and foil till supper.

http://www.esquire.com/features/guy-foo ... pe-ll-0407" onclick="window.open(this.href);return false;
4 pounds boneless pork shoulder
Salt and pepper
1/4 cup extra virgin olive oil
1 medium onion, thinly sliced
1 bulb fennel, fronds chopped and reserved, bulb thinly sliced
2 pounds ground pork shoulder (you can use already-made sausages if need be)
2 tablespoons fennel seeds
2 tablespoons freshly ground black pepper
2 tablespoons chopped fresh rosemary
6 cloves garlic, thinly sliced
2 eggs, beaten
4 red onions, halved

Instructions

Preheat oven to 350 degrees F. Have your butcher butterfly pork shoulder to an even 1 inch thickness, you should have a flat piece of meat about 8 inches by 14 inches. Sprinkle with salt and pepper and set aside.

In a sauté pan, heat olive oil until smoking. Add the onion and fennel bulb and sauté until softened and lightly browned, about 10 minutes. Add ground pork, fennel seeds, pepper, rosemary and garlic and cook until the mixture assumes a light color, stirring constantly, about 10 minutes. Allow to cool. Add chopped fennel leaves and eggs and mix well.

Spread the mixture over pork loin and roll up like a jelly roll. Tie with butchers twine and place in roast pan on top of halved red onions. Place in oven and roast for 2 1/2 hours, until the internal temperature reaches 160 degrees F. Remove and allow to rest for 10 to 20 minutes. Slice into 1 inch thick pieces and serve.

It was excellent. The lemon garlic mayo with the hot peppers and the cheddar made the burger even better.

Five pounds of pork belly, cured, smoked and sliced! Used a basic cure and finished half with maple pepper sugar and the other half with chipotle maple sugar both from Acadian Maple.

Woke up this morning and really wanted BBQ chicken. I rubbed this guy down with cocoa, jalapeno, some assorted dried peppers, and a little random mexican spice mix I got from the spice guy at the Dieppe market. Also oil. I put some Sydney St. stout in a can and put that inside to steam it while it was cooking, kept it really moist!
photo 1 (1).JPG
I smoked it over maple on the BBQ.
photo 2 (1).JPG
Made up some couscous mix, a spinach (with mandarins, onions, mushrooms, and blue cheese) salad, and some cauliflower and old cheddar to go on the sides.

Bachelor chow!

Deal, too bad we are about 2 hours apart. Although, we are doing a barley wine tasting here (SAAZ group) in two weeks. I looks like it might be potluck style eats if you can make it. :) I'd be happy to do up a chicken for that.
