I wing it, recipe is from memory. 1 cup of flour per crust, some olive oil and salt. Proof ~¾ tsp of active yeast with sugar. Enough water to bring dough together and make it sticky but smooth. Usually make the dough the day before, let rise a couple times and refrigerate. Allow to come to room temp before shaping crusts.

I run the Kamado around 600°F. Get it rocking at that heat for a half hour or so before cooking. Pizza stone on Kamado Joe heat deflector in the elevated position. Takes about 5-8 minutes per pie. Depends on moisture content.

Also, that's a 16" pizza stone. Pie is probably 12"

It is, yes.

I made the mistake on my first pie of placing the stone on the grill without any deflector under it. Made for a nice black bottom

First steak of the season (first grill was a quick sausage feed on Monday to appease the children). Could have been a touch more on the rare side but it was tasty nonetheless.

10 lbs of side ribs went down for a 6 hour smoke and a wee glaze. That's right.
