Pulled pork. Went on the kamado at 8:30pm last night, finished up tender at 11am today, foiled and rested for a couple hours and made into a great sandwich. Still enough fuel in the kamado for some pizza later tonight.

Second go at ribs on the kamado today. Went with a Memphis-style brown sugar dry rub and mustard-based sauce.
3 hours or so: I sauced and grilled off two racks and kept one dry (had sauce in the table to go with):
Maybe a touch overdone but nobody complained. First time with a mustardy sauce and I quite liked the tang.

Nachos on the kamado. Que Pasa chips, IMO the best you can buy here at least. I found some Texas red chili in the freezer so that went on there, smoked cheddar, olives, home pickled jalapenos. Crappy PC salsa spiked with cilantro cubes, lime, and chile de arbol powder.

I do 500+ with some pizza stones under. I don't let it preheat for long. In until the cheeze is melty and they start turning brown.
