When in doubt add more peppers. I have a feeling more will be going in. Naga Morich, cayenne, Fresno, hot paper lantern in there. Making wing sauce.

My oven turkey cooked in 2 hours short of the expected time. A little over cooked but still good.

25lb cooked in 4 hours.
