Valley Lambic Project June 8th and 9th

I am gauging the interest in folks coming down to my place ( Annapolis Valley ) on June 8th and 9th to do a 400L brew and set it out in an unused orchard for the night. The next day we (those that choose to stay the night) will pump half into a recently emptied Glenora Barrel that had beer aged in it for awhile. The other half we can either redistribute or place in a 200L plastic barrel and hit it with some Brett. As I know very little about this beer and the process, I am asking Chalmers to make up the recipe and help with the planning. The only thing I am asking for is people to commit to coming if they want to, and maybe some help getting ingredients brought down from the city on brew day. The plan is for this barrel to sit for quite awhile, but when it is ready (if consumable) We can figure out how to spread it around.
I have a few rooms available to use, Camping is an option and of course car pooling works too. Looking to get it started first thing in the morning and then have a nice BBQ later in the evening. Lets have some fun with this and see where it goes.

This sounds like an awesome project. I'm only woried that 400L is a lot of brew to risk.

15min vorlauf
1hr lauter
1hr to get to full rolling boil
1hr boil
As per Chalmers no chilling or limited chilling

As for waste. I have a friend with a large water distiller. It will not go to waste.

I'm in!

As for recipes, HP and I were talking about a Lambic, though a Flanders Red or Oude Bruin would probably work too.

I'm no Recipe Master, what do we think about:
65% Pils
35% unmalted Wheat
to get us to an OG of 1.050

A turbid mash is proper for a lambic, though I'm not sure how that would go on the big system system.

Thoughts?

MAsh tun is not heated. I was thinking we would use malted wheat and skip the turbid mash.

I was looking at that, wanted to talk to chalmers about the importance of fuly following the style. Might not be easy to get that much unmalted wheat either.

Somebody should grab their copy of wildBrews, and check out the info where wYeast did some experimenting. There was good info on what needed to be done for the yeast to have a good time....

I was talking to Chalmers about it on the weekend and he mentioned it was on June 8th (a Saturday) but I'm seeing here it's June 9th which would be Sunday/Monday for the brewing? I'm hoping the 9th is a typo...

Talked to Chalmers again last night and he is pretty confident the brew is happening on Saturday June 8th, cool overnight and put in the barrel on Sunday the 9th. If that's the case, Gavin and I are in! Brenna will likely come with me as well.

What do we need to bring with? I have a copy of Wild Brews that I can bring with/look up any info before hand if the recipe is still up in the air.

I have bbrianboogie's copy of Wild Brews as well (I should really give that back Brian).

It has a pretty simple version of the turbid mash that I adapted to my system. It's essentially a series of really think mash infusions (acid rest, protein rest, sacc rest) and then draining off most of the liquid to the kettle and infusing again to hit the next step, etc. Not sure how it would work on HP's big system, or if its necessary. I think the turbid mash basically sets the wort up with enough long chain stuff for the bacteria and brett to chew on, but it's probably designed to give ratios that would be best for the specific bugs in Brussels. We don't know what we'll get here. Maybe I'm overthinking... :?

So I effed the title, Jimmy will fix it im sure. Were brewing on the Sat June 8th and putting it in the barrel on Sunday June 9th.(those that stay can help with that) If you want a bucket/carboy of cooled wort for your own lets say $15 a bucket. The more notice I have on people interested the better. Like I said before, what goes into the barrel I will cover the cost of. We can set up the recipe in the morning, step mash is about the best I can do. It takes alot of wort to cover my elements.

Cool - I'm 99% then, with Gavin & Brenna and we will bring a carboy + $15!

What about food? Anything we can bring for the bbq etc?

Have you got a rough start time in mind? Pending what time you're thinking, would anyone be interested in lunch at Sea Level before hand?

We're probably going to want a decently-early start on things, like noon, just so we're not still brewing at midnight. Does the Port Pub do breakfast or brunch?
I think the idea of a step mash will be an acceptable way to go, and the idea of draining as we go is probably just fine (though we might be below the minimum volume for the kettle in the first runnings...). Kind of a bastardized turbid mash.
One thing I'd suggest is a longer boil. Traditionally they would do 6+ hours. I don't think we need to do that, but we should be aiming for 2 hours minimum.

Can you give me an idea of the grain bill we'd be looking at here, Jeff? Let's assume 400L, which I think is what we are looking at the minimum to do the boil properly. If we go for roughly what I posted above (65% Pils, 35% wheat, to a gravity of 1.050), can you give us an idea on weights? That way we can see if there's enough unmalted wheat between the crew. If not, malted wheat should be fine.

Also, what's the diameter of the vessel we'll be putting in the orchard? We should get some cheesecloth or similar fabric to keep the twigs and birds shit out of the beer.

And I'm in for a carboy of the extra beer too.
