Start with heavily marbled bottom blade...

I stole your idea that I asked you about at the brunch, small fire in my BGE. What a pain bad to relight twice ( see craycort thread) that should make it much easier!

Those burgers look awesome!!

I screwed around with "Charcouteries" recipe, I had no mace so I substituted for juniper berry and it tastes awesome. I also didn't have any good wood chunks so I used apple chips and some random wood that was ini the BBQ drawer.

Thanks. I cook all kinds of stuff but for some stupid reason have been intimidated by sushi or just figured it was too much trouble. I got tired of buying shitty sushi at the grocery store and paying too much for better sushi elsewhere.

On a whim I decided to try it and picked up a few goodies at the Asian grocery. I got some fake crab meat from Sobeys and have made California rolls a couple times this week for practice. I'm curing some gravlox for my next run at it. It's really not that hard.

i make sushi all the time, some raw salmon from superstore or pete's, usually might fry up a bit of sweet potato or put in some panko for some crunch

Kegged: barrel barleywine from 2014 - i think i still have this somewhere

I don't know about around here, but it wasn't too hard to find sahimi grade fish in Southern Ontario. Your a brave soul. I used to make it all the time, but I would be sketched out if I used the salmon I see at the superstore in Amhurst. Although there is a monger in Moncton that I would probably try it with, but only after talking to them about where it came from/how it was handled. But I agree, cold smoked salmon works great!

so i guess i'm a little bit particular. i only get it from the superstore on barrington, as i've heard it has the highest turnover due to the large asian community in that part of halifax. i also make sure it's fresh that day (but the guy could lie and i wouldn'tknow the difference).
