yeast life
I've bought Safale S-04 bricks for as long as I remember. I store the yeast in a mason jar in my brew shop fridge. My last 5 batches have been off. I figured something was dirty. After sterilizing and/or replacing everything my next batch is off too. I think it's the yeast that is the problem. Not sure how old my yeast is but could be 2 years. Some of the yeast is still alive as it krausens but I think bacteria are getting ahead spoiling the beers. I just ordered a new brick. My question is can I put a few months worth in a mason jar and vacuum seal the rest and keep in freezer to preserve shelf life?

I avoid mason jars worried that air will get in. I would vacuum seal the brick in 3-4 vacuum sealed bags (date them) with a little extra plastic at the top so you can cut open , take what you want and re vacuum seal. I keep them in the freezer.
