Trying a Raw Ale in the Norwegian/Estonian tradition, minus the juniper branches. I used up some leftover, unlabeled hops (about 4oz.) which I brought to a boil in the strike water to make a hop tea, which then once cooled to strike temperature, I poured over 20lbs of milled grain, again, some leftovers from other brews. I'm holding the mash at 155 for an hour after which I will run it through the chiller and then straight into the fermenter with 1 or 2 packages of Mangrove Jacks Kviek depending on the OG. I'll let you know in a week what happens!

Are you treating your wort with campden pre-ferment? I’ve read through a raw beer thread on HBT and the OP has issues with spoiled brews. From what I read, as long as you can hold 155+ on the mash for at least 15 minutes, you should be good.
