I had no self control tonight and had to try this one. Very unique beer.....enjoying it immensely.....I'm picking up a Doctor Pepperish flavor amongst the layers. Not sure what that is but definitely new for me.

I originally accidentally omitted the hops. They are now in the recipe.

Eric I like this and my wife did too. The carbonation was great! I find adding extract flavouring tricky but this is a nice balance with nothing over powering. It was a long day at work and this went well with supper. What yeast did you use?

Deep dark red. Very caramel heavy on the nose. Something else in there I wish I could identify. Really interesting taste. Very malty with caramel and I almost feel I am getting vanilla in there too. Now that I looked at the recipe I see that is what I am tasting. Took me a few moments to connect that flavour with a vanilla beer I had at Seaport one year. Really intriguing flavours in this one. Thanks!

This is all kinds of interesting. Definitely sweet on the nose, but not overly so. The body is kind of thin, which makes sense given it's a lower-gravity beer, but then the vanilla kicks in and gives it a nice full flavor. I don't even know what style you'd call it, but I could probably drink several of them (which I wouldn't normally say about a beer flavored with vanilla). Nicely done and thanks!

Drinking this one now. Nice vanilla flavor with a dry finish and some pear like esters on the nose. Nice beer to have for a snowy evening in :cheers3:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

The more I'm drinking this (I assume as its warming up) the more I like it. I think it would be better without the vanilla. I really like the roast.

Mine was flat and oxidized. I don't think the cap was on properly.

I didn't get to try this one much. My wife took one sip and stole it. Guess this ones on the brewing list in the new year!

Thanks for the compliments. Originally this was a plain, but good, Irish Red. The vanilla was added to give it a Xmas /Holliday feel. It was supposed to be just a hint of vanilla. The wife loves it.

Yeast was US-04. I'll update the recipe.

Really enjoyed this beer. nice deep red color, flavour was excellent, I thought maybe the vanilla would punch through too much but it didn't. nice.

I drank this one last night. I liked it, had just a bit too much caramel/sweetness for me personally, but that's me. The beer was smooth, warm and delicious.

Interesting. The vanilla masked some sweetness. I would like to try the non-treated version.
