Drinking this tonight Jimmy. I've tasted it before and it's well brewed, flavor and aroma haven't changed. Body seems better on this even tho it's the same batch. Possibly higher carbonation? Personally I'm not a black licorice fan. Aroma seems really inviting, but flavoring is different, almost seems like it could use more anise.

Jimmy, great job on this beer!
I'm really enjoying it, the only problem is my glass is almost empty. I like it as is but also wouldn't mind seeing what it'd be like with more star anise.
Very quaffable.
One thing I do detect is a bit of carbonic acid. I only recognise it because I've strugled with this myself in the past.

Kathleen really likes it Jimmy, she's drinking the other 1/2 bottle, she says anise gives it a flavour that isn’t bitter but adds the same kind of depth that bitterness does.

I agree with Pete (Hub Brewer) on the anise level. As high as I would want to see it in this brew but providing a fantastic taste experience. Still fridge cold at the moment so looking forward to tasting it as it warms up a little. Nice carbonation but no head retention.

Carbonation was great and lacing really good. Smell is of licorice and taste was as well. Ive never has star anise before and found it very noticeable. My personal preference would be for a little less just so it was another layer of flavour but it's really good. Good job Jimmy. Thanks!

Personally, I'm really not a fan of the beer. I brewed it because I like black licorice and wanted to try something different - but it didnt turn out to be the beer I was hoping for.

In this case it was mild, not what I'd call a bite. I've had this same flavour in some of my brews (usually light bodied amber or light brown srm), and I've also had the bite. I'd describe the bite version as a kind of bitter astringency. I'd describe this one as a bit tinny or metalic. I find this usually happens to some brews over time, kind of creeping in. I've held a personal theory it could be from setting your regulator at a decent carb level and your fridge doing wide temperture swings (from the point of view of the keg). CO2 disolves better at lower temps. I think a fan for air circulation helps, especially in my keezer crammed with 8 kegs.
Andrew, if you're reading this, do you remember the taste in your Scottish light a week or so after Hoptoberfest? That's the same as I detected here (this may be a bit less).
I hope this helps. I'm not the most experienced guy for describing flavours and this thing is also a bit elusive to me, still figuring it out.

Yeah, I remember it. I thought it was just because it was a little overcarbonated, so we turned the gas down for a bit before bottling. I don't have any anymore to compare to, but the judges didn't say anything about carbonic acid when I sent it to Toronto (they had more to say about other things though). I'm drinking Jimmy's beer tonight, so I'll see if I can taste anything similar.

Ok, I taste it now. I'm tasting more of a bite than astringency. Not a whole lot, but it increases as it warms up. I like it though, it's an easy drinker without being boring.

Thought this was really unique and interesting, but didn't really enjoy it. Thanks though for sharing something so original. Looks like many others did like it so I guess it is a personal preference thing.

A very inviting pour, dark with a foamy head, sweet candy aroma. Well balanced and overall tasty brown ale, nice malt with mild sweetness, not normally a fan of Anise but I like this beer....well done.

I am a big fan of anise as a flavoring and was looking forward to this. I thought the anise was at a good level -- you probably wouldn't want it any higher in a beer this small; maybe even a little lighter would have worked. It makes me wonder what it might taste like in a big beer like a baltic porter or a RIS, but using it in a mild was pretty ballsy. Nice beer.
