Is your efficiency really only 55%? I'm guessing that, plus many people topped up their gravity with dextrose, would throw the program off. I would calculate the recipe with 70% or so efficiency first, then account for low gravity by adding more base malt and / or dextrose. Sound right?

I have yet to input mine into Beersmith.

Yeah just click on the Grain Pct button to the right of the list in beersmith, change the percentages to those in Fishdisease's screenshot. Then change the tot efficiency in the box above you what you expect to get with this big a recipe on your system. Than take a look at the estimated OG below. If you need to adjust the recipe to reach desired og og 1.100 or 1.098 or whatever then just add some dextrose or more marris otter. If you add more marris otter be careful (depending on how much) because you may get too many unfermentables and get a higher FG than you want. I am going to mash this recipe low (149 or 150F) and aerate well to see if I can get away without using too much corn sugar and still get below 1.020.

Re the profile, you can set your mash tun specific heat to 0 since you preheat your water in the vessel. Also, I personally don't check the calculate boil volume button, or boil off unless you know the boil off rate and your grain absorption. The fermentor / bottling vols look ok but that depends on your system. Make sure to set your batch volume and pre-boil volume in the recipe window. Do all that before adjusting the base malt or dextrose to tune the OG.

For efficiency, use around 10% less than you would on a regular gravity brew. If you don't know I'd try around 60% here.

FermCap wasn't enough for this brew. It blew thru the airlock...several times. I had to attach blow-off tube. It has settled down now. I took a reading this evening and it was 1.022 and still bubbling. It tastes good already! :mmm:

Just wanted to remind everyone that this brew is to be place in the barrell uncarbonated incase that sliped through the details somewhere. Brewed up my batch on Sunday morning, went well overall. Hit the target 1.098 :mmm:

Sorry for the short notice guys, but I'm going to have to back out of round two... My wife and I just had our first baby and life just got real busy all of a sudden

The SAAZ 10 gallons are fermenting away quit nicely. I'll probably take a gravity reading early next week.

We should figure out a date to empty and fill that thing again. Would the same day as the grain pickup make sense? Did you end up using much of the angel share?

Brewed friday, looking good so far. Still a couple inches of krausen and blubing away. Probably check the grav sunday or monday.
Kegged: El Dorado IPA, Rocketfuel 2.0, Wet Hopped Pale, Ryrish Red, Marzen, BN Exchange Dunkel, BN Exchange NEIPA, Lies Lies Lies - Citra <0.5% ale
Fermenting: NZ Pilsner with Enigma, Strawberry brett cider
