I'm not going to be able to make it tomorrow, I've got to be off early in the morning but I'll be back by early afternoon.

And now for the bad news for those who weren't there (or good news, depending on how you look at it).
The RIS is sour, probably too sour to enjoy on it's own. Probably lacto. There were a few ideas tossed around, like pitching some brett or a lambic onto it and letting it age.
To be honest, I'm not stoked about doing something like that but I'm gonna take it easy and wait for more ideas. I know some stouts have a sour component so maybe blending is also an option.
I was really looking forward to drinking this so I'm a bit disappointed... I'm planning on brewing it again.

First off, thanks for taking care of the emptying guys!
Definitely disappointed that the beer is sour. I'll probably think about doing a blend. I actually have a sweet stout in a carboy that I could use.
Any comments on the oakiness of the beer or the ABV?

I bottled mine about 3 weeks ago and tried it last night. The sourness seems to have faded quite a bit. I thought it was pretty good. You can definitely taste the oak.

That's optimistic. I pulled off a few oz shortly after emptying and tried it with some bourbon which was decent. I'm still thinking of dumping in a half liter and bottling it up.

I bulk primed with corn sugar and sprinkled a few granules of dry yeast in most bottles. I left a few without yeast and they primed just as well as the rest.know1 wrote:
