I wish I could make it this year but with work etc I can't. I have two coolers you guys can borrow if you still need a few extra

Our sausages are being made today. I went by the spot to drop off the spices, hops and beer. Snapped a couple of pics, great shop and people!

I love their sausages and get them all the time at Sobeys. Non Hoptoberfest variety of course.

Forgot the details: over a cup of Thulsa Doom in each of the two 16lb batches. One mild, one hot. Both with hops.

Hope everyone has a blast. A bit bummed that I'm going to be missing this year but have managed to get myself invited to a beer tasting here in Edmonton that night which is a slight consolation.

We'll have room for one extra on the way over, but we're not really sure how we're getting back either, other than not driving. We'll probably just end up having to take a cab.

Hi guys Ive been MIA but skimmed through. I've added myself to the spread sheet.. Chris, what's the deal on sausages do I just show up with money? also I didn't catch time/address can someone fire that info off to me? I can help out with anything that needs to get done...

Great! Sausages will be $4 or $5 depending on final cost, cash is great. If you're able to put together a side dish or special condiment (I don't think we've got kraut sorted out, have we gang?), that helps a lot.

Im doing some bitchin' beer braised cabbage which is a good kraut like side im not sure what it tastes like because im going to come up with it tomorrow on the spot lol

Deets on the beer are 300ml of THULSA DOOM for each 16 lb batch. Doesn't seem like much but that's all it takes with a big beer.

I used the same recipe this time with a little heat cut back for the 'mild' version (which likely won't be very mild) and upped the game a little for the hot variety. I predict they shall be delicious plus epic once again! :cheers2:

I might take up the bacon Mac n cheese gauntlet for you Chris. It's something I can whip together tomorrow and bake day of. Will be all store bought cheese n bacon, not a pro smoker like some on here :^)

My IPA & Hop Randall dilema...

I have 4 hoppy beers on tap, a 4.5% APA, a 6.5% IPA split batch - one on S-04 with dry hop and not the cleanest yeast character - one on S-33 with no dry hop (cleaner yeast character), and Harvest IPA which tastes really green and kinda crappy.

I notice a lack of IPAs on the spreadsheet. Usually we have a load of them and I think we may be over compensating.

I also have a hop randall, which would be really cool to break out for the party. Last night I tried it with citra leaf and then some freash pineapple. Andrew came to test it as well. The citra was what I expected but no pineapple came through.

Regardless, I'm trying to figure our what to do here. The S-33 IPA was pretty unique on the randall but I'm not crazy about it like some of my former IPAs.

Maybe I should blend the S-04 and S-33 IPAs and bring the randall. Or I could just bring the randall for someone else's IPA.

It's gotta be beer mac'n cheese man! Also, don't precook it, cook it at the party. Also, its gotta have balls. And real thick double smoked pork belly. And some HEAT. And..... Bahhhh fuck I'm the mac'n cheese Nazi, the MAC DADDY :lol:

Just kidding. I'll make it good. But it won't be as good as what you're describing. I've got nothing to offer in the smoke dept. But if you want to bring some intense Mac an cheese I'll figure out something else to make!
