Yeah, that yeast is nuts! The only other beer yeast I've seen get that low is Wyeast 3711 French Saison.

Opened this one by accidentally looking in the fridge for #12. Not sue what Saison is supposed to taste like but this stuff is fucking spicy as shit in a good way. I may harvest this yeast from the bottle

That yeast is super aggressive. Depending on the character you're looking for with it you might have to mash higher than you normally would for a saison.

Mine was a foamy mess that ended up all over my basement floor :( Got about a 1/2: of beer in a glass

Mine was a "foamy mess" too. But all mine ended in my glass then belly. Took a few trips to the bottle tho. I'm not overly sure what a saison is suppose to taste like cause every one I've drank has tasted completely different, but really enjoyed the beer none the less. :cheers2:

I only put mine in the fridge yesterday, my beer fridge is too cold but I like it that way to keep yeast better. I cracked it to a nice pffft, no foam over. It poured nice but I had to raise it to get some head (ha ha!). The carb started to come out nice as it warmed up.

Beautiful nose, delicious beer and very drinkable. Great job, Jeff!

Glad mine didn't foam over because this is quite nice.

The yeast, malt and hops play real nice together.

Shit, must have been a couple bad bottles. I've opened about a half dozen and they've all been properly carbed. Any of you that didn't have a good taste feel free to pop in for a pint over the holidays if you're passing Amherst. I've got close to a full keg of it left.

I think that's very, very good and well made. Really enjoying it. From my reading I'd say it is to style, and it's nice to taste a saison, and that's my first rye beer also.

I harvested the yeast from this bottle. I'm gonna build it up a couple of times and then save it for the summer [WINKING FACE]

I think next time I'd change up the yeast a bit. It didn't kick off the amount of esters if been anticipating or shooting for.

Which is probably part of the reason I liked it so much (I have not yet acquired the taste for some of the stronger estery flavors). I also couldn't believe that this dried out to 1.001; didn't taste overly dry at all. Nice beer.
