I haven't brewed with this strain before so as the beer progresses I'll keep y'all updated as to when the slurry will be ready for harvest. It'll either be Firkin Wednesday, March 19th or Friday March 21st. At this point I'm leaning toward the 19th.
TubberRoe worked up the dregs from a can of Heady Topper for me. Hooray for TubberRoe!!


I cultured TubberRoe's starter up into a high cell count 50 L starter and dumped 850 L of DIPA on to it. Lag time was ~ 15 hrs. High krausen today and the brewhouse smells divine! When fermentation is complete I'll crash it down over two - three days to ~ 50 F to get it knocked down for harvesting without being too rough on it. I intend to use it again so if there's not enough to go around this time, there will be more on next generation. I'll wash it with Chlorine Dioxide between gens to keep it uber-clean.
First in-line is TubberRoe, of course. Some slurry for myself to utilize again, and a few L going to Bad Apple Brewhouse for Jeff to have a crack at. After that, it's a free for all.
I 'might' possibly pre-package it for you all so we know where we're at, so post up and pencil it in, folks!
