Andrew's Rye marzen-dunkel brownish beer

Post by amartin » Tue Feb 24, 2015 12:35 pm

I'm open to naming suggestions on this.

OG: 1.056
FG: 1.015
IBU: 24
SRM: 16
ABV: 5.65%

Recipe was for 8 gallons.

Grains:
4 lb Vienna Malt (23%)
4 lb Bohemian Pils (23%)
4 lb Rye Malt (23%)
3 lb Munich Malt (17%)
0.5 lb Pale Chocolate Malt (3%)
2 lb Liquid Malt Extract (0.8 lb for starter, remainder because I missed my target gravity) (11%)

Hops:
0.3 oz Warrior (60 minutes)
2 oz Willamatte (first wort hopping)

Water:
Dartmouth tap water, adjusted with 1g chalk.

Yeast:
Wyeast 1272 American Ale, started in 0.8 lb liquid malt extract and pitched whole.

Three vessel mash, with triple decoction (113 - 130 - 152 - 165).

Fermented in mid 60's for three weeks, then bottled conditioned.

Decided to have a whole beer after getting home from the death by a thousand sips that is the monthly meeting.

This is an interesting one to have the day after Adam's: somewhat similar grain bills, two beers without any crystal at all, fermented on clean american yeast, and also that don't lack for a little residual sweetness, both finishing at 1.015. Munich, Vienna and Rye is definitely a nice combination of malts (I'm guessing I'm not tasting any real character from the Pilsner here). The little bit of spiciness from the Willamette matches nicely with that of the rye. Carbonation is perfect. Nice beer.

I managed to score a bottle of this last weekend, thanks Andrew! I didn't take notes but I enjoyed it and thought it was really good.

In the past I haven't really cared for rye beers but you guys are changing my mind (xmas ones too).

I really enjoyed this one. Everything in my cellar seems to be 7+%, so a 'regular' strength beer was a nice change. No tasting notes, sorry.

Very nice balanced beer, from all three sides: malt, hops and bitterness. The bit of chocolate malt character really adds another dimension to the malt. Nice touch. One of those beers that I want to keep on drinking. Thanks!

Another really well layered beer with a complex malt profile! Every sip is something different, Great job, thanks
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I think this was my first Marzen, and it was a fantastic experience!

Nice Hazlenut colour with a thick ivory head which lasts very well. Sharp carbonation to start, but it rested into a delicious maltyness married with the slight black pepper spice of rye, like resting your head on a warm pillow. Hop biterness was balanced. The flavour faded to what almost tasted like Irish Cream?

Aroma was light and clean. Body was light to medium with a nice dry finish.

Wunderbar! Danke.

I had this one a couple of nights ago. I thought it was good, my first Marzen too and perhaps it's not my style. I thought the beer was clean, well carbed, but a bit too malty for me personally.

Another great beer! This exchange has been awesome so far.
