Garrison Ultimate Brew Off 2013

Post by LiverDance » Fri Dec 07, 2012 2:07 pm

Belgian Blond Ale - BJCP (18A)
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

This might be a reason for me to finally get around to brewing a Belgian

Sounds tasty. Was it like a Belgian Pale Ale, or did it come out more like a Belgian Blonde? Never used that yeast before...

It didn't quite turn out as the BPA, that yeast was a bit different. IIRC, it was well received.

I was going to brew a tripel next weekend, but that may turn into a blond instead.

Yeah this at least gives me a head start towards perfecting a recipe. This one is on the bottom end of the OG scale but the high end of the IBUs.

If it was me to do over again, I'd use a wyeast strain. Ardennes if it's available, or 3522.

I've got some washed WLP550 that I'll likely use as well. Will probably split a 10gal batch between the two. Did you ferment the T-58 warm or cool? What didn't you like about it? Just want to know what I'm getting into before I use it.

Isn't 3522 actually the Ardennes strain?

I've used the 3864 before... it definitely has the "Unibroue flavor" that you can expect from their beers.

IMO it's best to keep it cool at the start and let it free rise. That helps to keep the esters manageable.

Yeah you are right. I was thinking that was the dekonick vss number. There is another vss strain they release.

Will our guys be judging this one, or should we do another post-Garrison judging event like the rye tasting/epic burger?
