Gose has become one of my favorite styles of beer that i try to search out whenever i travel (needless to say i don't think a gose has ever been sold in Newfoundland).
There definitely is an aspect of luck in something like this, and i also need to give credit to Dave83 who brewed this batch with me (it likely would have been a disaster if he didn't keep me on track, i'm easily distracted). It was definitely a 2 man job since we did three different styles of beer from one huge mash and pulled some grist to do a decoction with Dave's grainfather. Then we pulled 5.5 gallons for a Berliner Weisse, used Dave's grainfather to boil the hefe, and the boil kettle for the gose. We came within 2 points of hitting our gravity on all three beer.
I added salt and lactic acid to the gose at kegging, and was worried about ruining the batch and all the hard work. I would add a small amount of salt, purge the headspace in the keg, mix it and try it. Then when i thought the salt was where i wanted it i did the same with lactic acid... which then threw off the salt level so i had to repeat the process, needless to say all the "sampling" made it for an interesting morning

LOL good catch, i don't think it has "Saint John, NB" correctly for any of them!
I noticed on the live stream they were saying i was originally from Halifax and now in Saint John. That must just be an artifact of brewing under the "Brewnoser" club based out of Halifax.

Awesome stuff Mark! How much lactic did you add in the keg? I did this once with a Flanders that I wanted a bit more tart. Not an easy thing

I found that ~ 10mls per attempt was the point where i could taste a noticeable difference in the keg, so i just kept adding 10mls until it hit the acidity i was hoping for (or thought i was) total was around 80mls in the 5 gal keg. I had found reports of people using 90 or 100mls to hit the acidity level they wanted so its probably pretty subjective.
