Lager yeast lagging too long

Post by RubberToe » Mon Mar 17, 2014 7:42 am

Hey everyone, Friday I brewed a 10 gallon batch of pilsner into two carboys. I pitched 2 packs of hydrated S-23 in one and Mangrove Jack's Bohemian Lager into the other.

Right away I knew something was up with the Mangrove Jack's. The dry yeast was on the brown side and after hydrating it smelled off. Oh well, I RDWHAHB. Both batches were oxygenated well with pure O2 and in well less than 20 hours the pilsner was off to a good start.

The pitch was Friday evening and the MJ still doesn't show any activity. They're air locked with a bung and blow off tube and if I'm patient I'll see the odd bubble escape. Something's probably going on in there. It's been about 60 hours since pitching and I'm positive I pitched the yeast into the right carboy.

Options:

1) Just leave it and hope for the best. Dump if it fails.
2) Toss in a pack of US-05, or even a Conan yeast cake I have, even though the wort temp is 10.5C.
3) Inoculate it with krausen from the other batch, pulling it out with a turkey baster.
4) Get a couple more packs of S-23 today and pitch it later.

Options 2a and 4 may be throwing good money after bad.

I'm open to suggestions.

-Rob

I'd say go for option 3, it's the cheapest and will be the fastest way to get it going as well
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I just did, and didn't get a whole lot since it's a bottom fermenting yeast. I got a little fermenting wort as well.

If it's still not doing anything when I get home from work I'll figure something else out.

Been down this road before. Went with a pitch of 1272 and fermented cool.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

If it's still fucked after work I have half a mind to bring it upstairs and pitch my Conan yeast cake. Conan the Bohemian. That could taste good or like shit, lol.

When I got home from work yesterday there was a small bit of foam on top and slightly more activity in the blow off. At first I wasn't sure if it was from what I transferred over but it kept picking up as the night went on. This morning there's a nice layer and it's way more active.

Noble Grape gave me a complimentary pack of S-23 on the way home just in case.
