Harvesting Pacman

Post by jtmwhyte » Mon Nov 04, 2013 6:48 pm

Just curious of what the odds are of cultivating a culture of Pacman yeast from a Rogue bottle out of Premiere? Would it likely be dead by the time I get to it?

I am drinking ale today." ~ Poe

I tried before and failed, but that was many years ago. May be better now....
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

I'm going to the city tomorrow and was thinking of picking up a bottle or two of Dead Guy to give it a hook.

I did it last year, took a while to get enough to brew with but it worked.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Do their bottles show bottling dates? Could you check with Premier about when they get a new shipment?

I'm gonna attempt to harvest from a single bottle. If it doesn't work I'll gather a few up for next time.

How's this looking? I was thinking of running up to Premiere at lunch to grab a bottle of Shakepere to harvest from.

It never really took off any more than what you see in that picture. I'm gonna try again with two bottles.

Did you step it up again? Can you measure the gravity of that small an amount of wort? If it's finished step it up 10x.

I got a bottle today so I'll likely start this process over the weekend.

Can the Noble Grape bring it in? Wyeast at least used to produce it.

It's not available anymore. A couple months ago I tried to get it through NG.

The first step was really slow but eventually got going. I stepped it up the other night and here it is now. I'm not sure when I'll brew with it so when this is done I'll toss it in a mason jar in the fridge then make a big starter when it's time to brew. I'll taste the starter wort when this is done too.
