Half of my beer will not ferment

W T F

One carboy of my Amarillo lager won't ferment. I pitched a smackpack of 2206 at 9f on Saturday noon. On Monday at 8pm, nothing. So I cranked up the temp a few degrees. On Tuesday at 7am, nothing. So I threw in a pack of -05 and brought the temp up to 64. At 8pm, nothing. Got up Wednesday morning, a bit of airlock pressure, but no fermentation. I am really stumped, as the only sanitizer used was starsan, an the 1272 is rocking like mad. I am confused.

Did you raise the temp to 64F before adding the US-05?

No, but I was still expecting to see wort movement by now.

Hmm, did the 1272 one have a starter? Since you split the batch this is probably more about the yeast and environment than wort fermentability. I'd just wait it out at this point although it's been long already.

If it was a 1.050 ish OG then 1 smack pack with no starter is probably not enough yeast. You'd need 4 if they were fresh, 2 if they were fresh and you made a starter. I suspect the small amount of lager yeast in that batch is chugging away at multiplying and using up the large O2 stores it has to itself before it starts fermenting. Is the specific gravity moving down at all or are you just basing it on visuals?

Visually, and maybe you're right about the O2 being slow to be used up. I just expected the -05 to get things moving quickly. First and last time I use a smackpack without a starter.

Yea, seeing no action is the one and only thing that pisses me off after all the work we do to make good beer. Update us later on.
