I'm fermenting 5 gallons of IPA with BRY-97 at the moment. Its definitely a slow fermenting yeast, especially compared to the other 5 gallons that S-04 has already ripped through.

I've been using BRY-97 for the past several months. I won second place in the brew school contest last year so they sent me 50 pack of yeast - waited for the new strain. I'm interested in trying the Saison now... I asked NG if they will carry it...
The problem we face is that no wholesalers carry them (because they are a “niche” product and that minimum quantities are very high when buying direct. I have sent an email to Danstar asking if they would consider reducing these numbers for me.

Meanwhile there are some great liquid yeast options that can be special ordered if you are interested. Let me know.

I have a saison with that strain that should be ready to bottle. I'll make a note to do a quick write up on how it turns out.

How does the beer with BRY-97 compare to other yeast, like US-05, Nottingham or even some liquid yeast? I haven't tried it yet since I haven't really read that many reviews yet.

My opinion is that it is to US-05, what Wyeast 1272 is to 1056. Slightly rounder flavour profile (both hop and malt) and drops a bit clearer than US-05.

Thanks Jeff. I made a very light ale with US-05 and it was too clean. This was one of those beers that was made because I wanted to use up my old stock of everything. I used Weyermann Pils malt and didn't get that good malt taste that I wanted. I don't make a lot of lagers, so this yeast may give me more of a malt and hop flavour that I am after. Yea, US-05 is like soup when I keg. I give it a good week with Gelatin before I transfer to another keg.
