The hot rocks add earthy flavors, smoke and soot...the sugars caramelize on the rocks so it adds some sweetness and colour. We used hardwood to make a coal bed.
We did a 60 min boil with the rocks...we did heat the wort to near boil with propane...just to save us some time.
Recipe was in the oktoberfest style.

Mashed at 152f for 90min
2oz of Tettnanger at 60min
White labs german ale/kolsch yeast

Brewed a pale ale today.25 IBU EKG hopped with Amarillo finish. 50/50 2-row and pilsner malt with a pound of 60* crystal, a pound of biscuit, and a half pound of chocolate. 1.062 OG fermenting on S04. I will probably dry hop further with more Amarillo and dilute to 5% when kegging.
