Re: What's everyone making this weekend?
For the schwarzbier i'm using the bohemian lager strain WY2124, and the Dunkel i went with the german bock yeast WL833.
The 2L is the west yorkshire strain, i'm doing a new version of my english bitter but bumping it up to a special bitter and adding some carared just to try something new.

I'm hoping they will be ready for the brewnosers comp but it will be tight.
Pitching a massive quantity of yeast to up my chances. I did double starts for both and plan on pitching these 500ml ones directly once they hit peak krausen.

Hoping to brew a light belgian single abbey tonight to act as a starter for a dubbel/trippel soonish. Very simple, pilsner, vienna, bit of sugar. Hops just Styrian goldings for bittering, WLP 500 for yeast.

Fermenting: Oud bruin/Vienna Pekko SMaSH
On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA

The two lagers are a dunkel and a schwarzbier and the ales are a 8B Special Bitter which is a revision of my 8A The Bitter End, and a revision of my Sunday Stout (Dry Irish)

Re: What's everyone making this weekend?
Had a little adventure with my brew yesterday. I don't know whether I didn't boil as hard with my old burner or what, but after pretty much hitting my pre-boil gravity of 1.054 on about 27.5 L of wort, my Blichmann promptly managed to boil off something like 3 gallons on a 90 minute boil
OG was supposed to be 1.067 on about 21L.
I ended up with nearly 1.090 and only about 16.5L.
Obviously in order to get any kind of decent volume I was going to have to top up. I boiled a little more than 4L of water for 15 minutes, cooled it and stirred it in before pitching my yeast. Looks like it worked out pretty well:
There was no traditional bittering charge in this recipe (additions at 30/15/5) so while I will probably have lost some hop flavor, I don't suspect I've lost too much bitterness. There's also a sizable dry-hop later (1oz each Cascade and Citra) so aroma won't suffer too much.
Going to have to do some experimentation to determine a more appropriate boil-off rate. I may just have the burner cranked up too high.

Re: What's everyone making this weekend?
If it helps, my boil off rate with Blichman and 20g pot is 6.67L/hr when outside temps are above zero, no wind. Add some wind, or drop the outside temperature to something below zero and I'm at around 6L/hr.

Yeah, 11l in 1.5hrs seems reasonable to me. Maybe a bit on the high end, but still in range.LeafMan66_67 wrote:If it helps, my boil off rate with Blichman and 20g pot is 6.67L/hr when outside temps are above zero, no wind. Thanks guys, the question I forgot to ask was whether that rate was normal. I know it's a lot higher with the same pot (15g from Dave) than my old burner (turkey fryer), but even with the Blichmann dialed way back the boil was more vigorous than I used to have. My only thought is that the heat from the Blichmann is more even across the bottom of the pot, which leads to a more uniform boil at the surface, which leads to additional evaporation. Doesn't really matter why though, just that I need to refactor my calculations. I also forgot to say the Blichmann is fucking awesomeJimmy wrote:Yeah, 11l in 1.5hrs seems reasonable to me. Re: What's everyone making this weekend?
Brewed up some ordinary bitter this eve
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Just bought a bag of organic 2 row and am doing my first 10 gallon brew. Thinking APA, IBUs in the 30s, something delicious you can drink lots of. Any recommendations for hop combinations? Nelson Sauvin, Amarillo?

I opted to be lazy and not drive out to Dave's, so I did what I could from Noble Grape.
10 gal Pale Ale with Amarillo, going to split to 2x 5 gals. One dry hopped with american ale yeast, the other with ESB yeast.

Re: What's everyone making this weekend?
Knocked out 25 gallons yesterday on a 13 hour start to finish brew day. Wind was a bit much so am going to build a large block before the next brew session.
10 Gallons Funktown APA
10 Gallons Tall Dark & Handsome Robust Porter
5 Gallons Hoppily Ever After, 25.5lbs of hops! Simcoe, Falconers, & Centennial
Still need to tear down the ball locks to give them a good cleaning as last night I just flushed with star san, but other than that it's done.
