Brewed up a lambic and split between melange yeast and bug farm
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

It is 33.5 lbs for a 10 gal batch of 90 actually, good eye!

Hit my mash target and only 10 min left in the boil. I haven't brewed on my big system in 3 months and I'm so used to the 2.5 gal stovetop system I was worried that something would go south on me

If your brewing partner is Eric then you can blame it on him. Tell him I said that and you should get a better brewing partner. lol X) :moon:

Just planning out my brew days while I'm off, and will be getting the recipes put together one night this week. I may be squeezing in a 5th brewday, however this will depend on if I can clear out another keg between now and then.

I need to stock up on the fundamentals and get my Garrison entries finished. I'm off from Dec 27th-Jan 5th. So if anyone wants to brew together over that time I'm open to it. :cheers2:

10 Gallons House APA (Mandarian Bavarian hops this round)
10 Gallons Nut Brown - Neighbor is whining that I don't have any on tap.
5 Gallons Garrison Entry #1
5 Gallons Garrison Entry #2 Same as #1 but with 6oz more Black Patent

TimG and I made a 44L batch of RIS from rubbertoes recipe from the barrel project

13800 g Pale Malt, Maris Otter (Thomas Fawcett) (3.0 SRM) Grain 1 68.8 %
1700 g Munich Malt (9.0 SRM) Grain 2 8.5 %
1700 g Roasted Barley (300.0 SRM) Grain 3 8.5 %
1100 g Caramunich Malt (120.0 SRM) Grain 4 5.5 %
750 g Chocolate Malt (450.0 SRM) Grain 5 3.7 %
300 g Caramel/Crystal Malt - 40L (40.0 SRM) Grain 6 1.5 %
300 g Caramel/Crystal Malt -120L (120.0 SRM) Grain 7 1.5 %
400 g Corn Sugar (Dextrose) (0.0 SRM) Sugar 8 2.0 %

I ended up taking the second runnings from the RIS (approximately 19L) and boiled it down to 14.5L with an OG of 1.032, added a little bit of US-05 and a WLP 665 Flemish Ale Blend. Hop schedule of the second runnings is below.

15.00 g Northern Brewer [8.50 %] - Boil 90.0 min Hop 9 5.7 IBUs
14.00 g Northern Brewer [8.50 %] - Boil 10.0 min Hop 10 1.8 IBUs

This will be a weird project of blending second runnings from TimG and I's adventures. This will either turn out terrible or good. I'll report back in a year.

I see you subbed out special B for caramunich... I know it can be hard to find. I think that's the recommended substitution anyway. Did you use goldings for the RIS hops? I should post this in the recipe section.

Yeah we didn't have any special b.
I think we used citra at 60 min and willamette at the end as subs.

This week I'm planning on GuingesRockin' it and doing a double batch (2gal) Vienna Lager SMaSH fermented in my kettle. I plan to split each gallon. One will be lagered in the fridge, the other will be lagered at fermentation temp in the basement. This is my first attempt at a lager!

Details not complete but 100% Vienna malt and 100% Saaz for an ABV around 4.5% and an IBU around 25. Thinking of using dry yeast, but may use wyeast Bavarian or Munich lager yeast if Brewery Lane has it.

Comments and suggestions welcome.

I never made a lager :( project for the new year maybe. There are so many lager styles to be made and interesting historic beers that are lagers.

Don't get carried away Josh with your 2 gallon "double" batches.

The beers sound good though.

The guingesrockin part is for the kettle ferment. Seems reasonable to do!

Got it! All makes sense now. What's that early senility that's related to drinking alcohol called? ...Wernicke's encephalopathy or something, I might have a bit of that, or maybe I'll have a bit of beer instead. What's up for Advent tonight? :mmm:

Wanted to brew today. Got the screen tent on sale at Canadian Tire. And just mashed in on my Mandavarian Bavarian IPA. can't wait to have a garage and a dedicated space.
