How do you know how much phosphoric acid to add to the mash? I'm starting to to tinker about with water profiles in 3 gallon batches and was curious how you went about correcting pH...

I modified EZ water (don't tell them) so it calculates 85% phosphoric acid. Attached is the chemistry used for the Poolside Blonde. Caution when you use it. I haven't fully perfected the modification but it usually works out for me. For example, my brew today was supposed to be a mash PH of 5.23 and it ended up being 5.1. You could get that kind of variance if you try using the modified sheet. No swearing at me if you use it.

Plus, once you have done a brew and got it right, all roughly similar grain bills will be the same. That's what went wrong today, I was in automatic mode and didn't look at what I calculated for the mild, which had a vastly different grain bill.

I have my grain bill crushed and my water pre heating for a DIPA I'm brewing first thing in the morning. This is my calendar brew. :banana:

Kegged my Oktoberfest I brewed in July, fermented a month with lager yeast then dropped to 2 degrees for 6 weeks. First homebrew I've been very pleased with in ages.

Got my Wheat Porter done for the exchange today. First brew in the 15g pot so I was nervous. Came pretty close to hitting my OG and volume though.

I made 10 gal of Big Spruce beer last night. Pitched equal amounts of rehydrated us-05 into both carboys, one took off a couple hours ago, the other is still thinking about it. I'll give it another couple of hours before I start experimenting with that half of the batch with whatever yeast I can find in the back of my fridge.

Decided I'm going to pound out a quick batch of an American Wheat/Rye for the Big Spruce competition..have a bunch of wheat I need to use up, and some rye that's also been kicking around for a while. Going to brew it this evening.

I brewed 2 all-grain, 1 gallon batches.... Got a little tipsy and pitched far too much yeast in the first one :) .. Next day's batch had a too little water, boiled off more than I should have :(

Brew and learn .. I'll get it down sometime !!!

Have a trio of beers planned for the weekend.

Dubbel with palm sugar, because, well Saskatoon has very little selection of brewing adjuncts, and I think it will impart an interesting flavour. Supposedly more fructose than sucrose, but I have no idea.

AK 1917, I flubbed the first batch I made here in Saskatoon...turns out if you don't rinse out your chlorine detergent solution from your system, your beer tastes like cleaning solution :eeew: ... this is why you should enjoy the beer after brewing, not before... X)

Christmas beer. Cloves, nutmeg, cinnamon and star anise.

Shakedown brews for my upgrades to my brewing system. New mash tun, and affiliated parts.
On Tap "in bottles": winter beer (spiced beer, nutmeg, cinnamon, star anise, ginger, cloves)
In Secondary:
In Primary: winter beer (spiced beer, nutmeg, cinnamon, star anise, ginger, cloves)
