BCS is Zainasheff and Palmer's book "Brewing Classic Styles". Great intro to styles AFAIC. The recipes are all done as extract recipes with partial and all-grain options which makes it pretty darn useful and versatile.Keith wrote:What is BCS? I'm not familiar with it?

You may find that with an extended/overnight mash you may get better attenuation than you were expecting
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Re: What's everyone making this weekend?
Thanks for the heads up. I've done about 10 overnight mash batches now and I've not noticed a huge difference in attenuation, although the styles I've brewed required high attenuation anyway. We'll see how this works out. Worst case scenario it becomes a "Red APA"LiverDance wrote:jtmwhyte wrote:Ripping out an overnight mash tonight:

Alt in the keg, Hefeweizen bottled. Fermented down to 1.011. Pulled a sample last night, really happy with the flavor.
Just about to run to Kent to get some paint strainer bags to begin the brew day. I think I may just do 2 batches for today, and possibly 2 tomorrow. Wait and see how the day goes.

Re: What's everyone making this weekend?
Belgian Saison has been brewed. 3.5 hrs start to finish.
Starting the Black IPA now, waiting for the water to get up to temp to begin the mash.
WCIPA just ran dry, drinking quite possibly the last glass of Fat Llama. Soon to have a beer emergency! Hoping temptation keeps me away from that Altbier for a few months.

Just brewed (earlier in the week) my second attempt at cloning Alpine Duet. Slight change in the grist, upped the hops (equal amounts Amarillo and Simcoe).
