At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Going to brew a cream ale today.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

What did you have in mind? Maybe we could do a collaboration over the Holiday?

I am drinking ale today." ~ Poe

Absolutely

I'd like a variety... IPA, stout, Cream, Keiths 1917, and something TBD

I've been itching to do an American Stout for months. Maybe we could rip one out? What does your schedule look like over the holidays? I'm off for 15 days but am also in Cape Breton from the 27th to the 30th.

I'm brewing batch # 2 of my Wit beer, really enjoying this beer, however have fine tuned it a bit more.
Also will be brewing my first attempt at an Altbier (want a few test runs in before the advent). :cheers2:

Just doughed in an American Brown Ale (Janet's). First time brewing in a long time - too long.

Yep. I've added a plate chiller with brew pump and upgraded my thermocouple with an RTD sensor. The thermocouple was way off so I just ordered the RTD kit from Auber. Temperatures are bang on now.

The plate chiller from OBK is great; I still have to do a review of it for him to send out real world performance specs. It saves me time and water compared to my immersion chiller that no longer fit in my brew kettle very well with the electric element installed.

Brewing is getting easier, but somehow I'm brewing less. Go figure.

I like the Auber RTD too, thinking of getting another.

You must use a hop spider or other filter for your hops with the plate chiller?

I know what you mean by brewing less...

Yes, I use a SS screen fashioned into a home made hop stopper that seems to work pretty well although it's tricky to clean afterwards since I have it attached to the kettle dip tube with a hose clamp.

Brewing went well. I took some liberties with the recipe based on what I had on hand for hops and grain. I'm looking forward to drinking something other than my not-very-sour Berliner Weisse that is the only thing on tap at the moment.

Next up is a Kern River Citra Double IPA inspired brew and then maybe a Weissbier for Mr. Girard to comment on. He's German trained so hopefully gives some good feedback.
