Brewing the Sweet Cherry London Porter. Nothing better to do tonight... in a side note I'm enjoying a nice glass of cascade WC IPA :)

On Sunday I did 44 litres of Oatmeal Stout, Nottingham in one carboy, WLP007 in the other. I just took a sample of the 007 since it's settled down, went from 1.054 to 1.016 (pitched the yeast Sunday night). It might go another point or so (hopefully).

Tonight I knocked out another double batch, this time an Ordinary Bitter, OG 1.039. US-05 in one, US-04 in the other. I was lazy and didn't oxygenate or rehydrate my yeast but it shouldn't matter much with the dry yeast and low gravity. The fermentaion chamber is set to 17 C.

I'd be really curious to try these to see the difference in yeast character.

Brewing up a centennial IPA with chalmers
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Quite an ambitious day - witbier in the fermenter now and nailed my OG
I thought my efficiency would be way off, possibly the snow helped balance the boil off :)

Just kegged off my Sweet Cherry London Porter. Great tasting beer already. Looking forward to a tap freeing up (I can see this happening soon).

Made my first specialty grain brew this weekend with a few buddies. A golden cream ale from a recipe at NG, but upped the dextrin malt as well as the boiling hops. Smelled and looked great, really looking forward to trying it. It will also be my first brew that I'm kegging.

Also started another festa west coast IPA today, as the first one was great. I'm looking to dry hop this one.. any recommendations on hop type and how much?

Personally I'd go with 1oz of Cascade pellets and 1oz of Citra pellets for that tasty beer if I were to dry hop it myself.

Love that beer kit, toss up between that and the Altbier on which I like most.

I have tried it after my friend dry hopped with 60 g of Cascade and it was really nice.

6g or 60g? 60 is in around 4 lbs of hops. That would be insane.

Take a look at the below and let me know if there is anything you want to try. All recipes are AG or Extract. Pic quality isn't the best.

Getting ready to heat water and mill grains for Mad Man Mild, a 3.8% ABV brew hopped with 4+ ounces of Cascade, mostly late additions.
