I just found the original recipe quite dark (it was a good beer though), so I decreased the chocolate malt and subbed it for brown and pale chocolate malt..both were good beers.

I put a blowoff on both, better safe than sorry. I usually put a couple drops of fermcap in though so I don't end up with a huge mess.

I find that with that much room in a carboy I don't need a blowoff if doing lagers, but never take a chance with ales and always use one.

I've been finding that the only time I need a blowoff tube is when using Nottingham yeast.

I just made an oatmeal stout last night. First AG stout, and the conversion was way better than expected, I'm afraid it might be a bit strong on the abv.

Just brewed my second 2.5 gallon AG, an ale made with 3.5# Pils, 1.25 # 2 row and hopped with Perle and Tettanger. Pitched Notty @ 60*, trying to keep it in the mid-upper 50's.

A is on the road so I took another pass at my Proportional Porter recipe:
5 Gal batch
12 lbs Canadian Two Row
1 lb CaraVienna (left overs)
1 lb Crystal 40
1 lb Chocolate
.5 lb Roasted Barley
3 oz East Kent Goldings, 60 min
1 oz Fuggles, 15 min
Coopers IPA Dry Ale yeast (another left over), stepped up to 700 ml
Hit my calculated OG, 1.76, right on the number and is bombing away like a bullet train.

Grains crushed for a dry stout from BCS. Moving brew day from Monday to today. Rather brew in cold but clear rather than possible snow and wind. And the wife said we have no plans today so I may as well brew!
