Chocolate malt

Post by Celiacbrew » Sun Jan 11, 2015 10:56 pm

I made a version of the BCS' Janet's Brown Ale three weeks ago. Just put it into the keg yesterday and noticed that the flavour from the chocolate malt was way out of balance. Didn't think too much of it figuring most of it will fall out over the next week or two. That was until I went to do up my notes in beersmith and realized I used 33% more chocolate malt than the recipe called for (4% of the malt bill vs 3%) and the recipe called for 350L chocolate but I think Dave sells muntons which is 450L. Anybody know how much that flavour will mellow out and how long it would take to mellow? Currently it is drinkable, but crappy enough I would dump it.
