Bohemian Pils.

Post by Keith » Sun Oct 12, 2014 12:34 pm

Hey,
So not only am I going to brew my first Bohemian Pilsner, this will also be my first lager. Unfortunately I won't have a lager chamber so am going to try and ferment this in a small room with heat off and let nature control the course.

Idea of the build.
8.5lbs Boh Pils Malt
.75lb Vienna
.5 carapils
Mash 150 for 90 min

1oz Saaz @ 60, 15 and 0.
1/2 tablet Whirlfloc
W-34/70 Lager Yeast

Ferment 2 weeks between 8-14 Cel. (unfortunately can't control it that well).
Move to primary for 1 month, then keg and force carb.

As for my water, I know it calls for low mineral, so I'm going to use pockwock tap water as it is. I know sulphates are slightly higher than what is recommended, but it should do just fine.

Any recommendations, or suggestions for lagering or on my proposed build? Still need to plug it all into beer smith but I think it should work nicly.

Keith, why not try and do the water bath with some frozen pop bottles? I'd say temperature is a really important aspect of this beer.

Yeah if you could get your temps down to 10-12 degrees it would be better. Make sure you pitch lots of yeast, like 2 packs.

You could always cut the water with some distilled water too to get the minerals down.

RO water is cheap. It costs me about 9 bucks for a 10 gallon batch of beer (for about 1.060 - higher gravity=more water).

I'm doing 10g as well. I just picked up a pound of Saaz from Dave today. I'm gonna split between w34-70 and either Mangrove Jack's Bohemian Lager or s-23 (I have 2 packs of each)

Where did you get your Mangrove Jacks's? I tried the same yeast earlier this year (2 packs in 5 gal) and had horrible 60+ hour lag time.

noble grape over the summer. As I think about it I'll probably just pitch the s-23 in the second carboy

Well I don't want to scare you off of it and now's a good a time as any to use it. I was kind of interested in how it works for you. BTW my brew turned out great, just the lag time sucked. It was also at 10 degrees.

I've made the same beer with S-23 and W-34/70 as well, had good luck with those.

I just made one. I used WLP940 and pitched @ 46 F. I let it rise to 50 F and didn't do a D-rest. It turned out great with no off flavours like sulphur, buttered popcorn etc. I do think temp control is the most important factor in lager brewing.

As G-rock pointed out to me in the HRM Water Profiles thread, Windsor water is ridiculously close to Pilsen water. I also happen to know where you can collect it for free.

On the corner of Wiley Ave and Wilson St (right at the top of the hill) there's a town sample tap. It's pouring town water 24/7 into a ditch. Bring a large vessel and your boots. Stop by and say hi if you want, it's right next to my house :)

Shane posted an awesome picture here: http://www.brewnosers.org/forums/viewto ... ll#p100002" onclick="window.open(this.href);return false;

Just looking at that picture is enough reason to make one of these.

That's cool, been in Windsor many times but never knew it was there. Found it in street view though.

Weymouth has one too but this is a natural spring that was one used to make soda by the Jones Bottling Company. They put in an overflow so the community could use it too.

There are actually 4 naturally running springs that the public can access in NS.

That's a cool idea (online map showing springs). Doesnt look complete though, I know of 3 in Pictou County that are publically accessible -best of them is the greenhill spring at the base of green hill. Probably pumps out at 2 litre a second at springtime peak
planning: beer for my cousin's wedding
Fermenting: black ipa
Conditioning:
Kegged: barrel barleywine from 2014 - i think i still have this somewhere
