Bacon that I make for putting in and on my turkey... It's different than regular bacon because SWMBO won't let me snack on it:(

Nick inspired me to fire up the smoker for some ribs for supper. I might just throw on some chicken, because I can.

I hope mine are as good as yours look. Mine have been at 225f for 2 hours now using Hickory chips.

The ham is painless - just a regular smoked picnic style ham from Superstore, trim off the fat cap, give 'er a good rub with your favourite BBQ rub and let it smoke at 230 to 250 or so. This one came off at 175 internal temperature after 10 hours. No plated pictures - the meat was excellent.

I'll be using this method now, just a little more organized - another drip tray for the legs, so i don't have to squish everything together. As fucked as that looks, the turkey was absolutely perfect. No more dried out breast meat.

May try that one. Another trick for the WSM is to do the breast side down - temps run hotter at the top than at the grate. Helps cook the dark meat a bit faster.
