Salt cured Chicken. 2 hour cure in the fridge and rinsed off and seasoned. I let it rest and smoked it on the Weber until it hit 180F with Wine Barrel Oak Chunks for smoke. It was tasty!

Prepping for an overnight "picnic" pork shoulder cook - a bit of my own rub with some Bad Byron Butt Rub on top. Should be 12 - 15 hours on maple lump charcoal along with apple wood chunks. Also, these creyovac picnics are on for $0.99/lb at Bedford Superstore.
