Ok, it was my first "steak" in a while - I'm a bit rusty. I did close to 4 - 4.5 mins a side and yes it's a bit more charred than I'd like. However I love that shit so it should be good anyway. It's on a pan with the vents shut for a bit. The vision thermo almost pegged.

With a chunk o meat that size and the temp that high, the internal temperature will rise more than you'd expect after you pull it. So, yah, just sayin' :banana:

When I pulled it the internal team was only 115F so in a 300 degree oven it went while I had a quick shower. Pulled it out for a short rest after that. Final temp was 155 so not bad.

Wow was it ever tender and succulent. On that front 10/10 would do again.

Shorter sear next time. I was afraid it would be raw in the middle and the low internal temp threw me. You're right it came up fast.

This is a really tasty piece of meat and oh so tender I can pull it apart with my fork. Leftovers tomorrow.

Greek inspired salad to go with it.

Best thread ever.

I made some ramen. It's not true to style but was wicked. I made some banh mi meatballs for it, just an idea I had. I started the broth sometime yesterday, which is kind of pho inspired.

There's more for tomorrow and broth to freeze.

We had our own "Burger Week" tonight, I (yes, me) made turkey pesto purgers with guacamole, bacon, lettuce, tomato and an egg. Usually I suck (horribly) at making food, but this was actually amazing!...if I do say so myself :mmm:
