Bacon time. I got 3.5Kg pork loin from Costco, brined for 48 hrs as per Ruhlman page 89, air dried in fridge for 24 hrs, hot smoked until about 165F. Chilled, then packaged.

Looking great! Did some pastrami for the office people-didn't soak it long enough so it was saltier than I would have liked, but flavour was great.

This batch of mine is a bit too salty as well. Still great in small quantities ala charcuterie board, cheese & crackers. When it's not so salty I like to cut it thick, steam it, and eat as a meal with perogies and sauerkraut.

I took my first shot at smoking a sausage fatty yesterday, I stuffed it with 2 - jalapeno peppers, 2 - habanero peppers, onion and loaded it with shredded havarti cheese. I was pretty happy with the results and I still have a piece left for breakfast this morning, a huge success. :smoker:

Nash is correct (That's right!!!!), the bacon crisped up nicely as I smoked it around 3 hours at between 225-250F. Since I was also smoking two beer can chickens underneath (I have a cabinet smoker), I put the fatty directly on the grate with AL foil (poked holes in it) as I was concerned about cheese dripping from the seam onto Thelma and Louise. Due to this, you can see small parts of less cooked bacon which was where the fatty was on the AL foil. For my next fatty, I am putting it directly on the grate and will not be using the AL foil....accept the mess :headbang:

Catching up with some pics.

Pizza, done in the OVEN. Sorry my Kamado bretheren but it was cold as fuck out and I was feeling lazy. It turned out great though. Smoked Hungarian sausage, green olives, pickled jalapenos, some smoked cheeze.
