Re: The Official What's Cooking Thread [Food Porn]
This. It's the best burger I've ever made. I know, I just ate it.
Smoked bacon, smoked cheese, fresh pickled jalapenos with coriander and cumin. Hop mayo and lots of it. I usually drown my burgers in ketchup but there's not a drop on this. Pickles, romaine, some cilantro, pretzel bun. Cooked on the kamado of course.
The patty was really good too, about 50/50 beef and pork, mixed with onion powder, pepper, worchestershire, egg, and breadcrumbs. If it was fresh ground I might not have added that stuff. It was juicy and very tasty!

Late night birthday burgers with a pal!
50/50 grass fed beef and meadowbrook Italian sausage.
Citra mayo mix with peanut oil basted portabello. The only good buns I had in the house and of course a delicious growler of Fathom IPA!
Edit: smoked Gouda, banana peppers, dill pickles, Dijon mustard, romain lettuce!

Yep - salt cod is traditional and makes an awesome fishcake, but these are haddock - 50/50 mix of haddock to potato. I've also done salmon & dill fishcakes - using whatever I have on hand.NASH wrote:Fish cakes look delicious! Loves me some salt cod cakes!

I do the same, they're delicious with any kind o fishes. I generally amp 'em up with roast garlic, shallots, chilies and whatever else I can find in the fridge that looks good. For me, salt cod still reignsLeafMan66_67 wrote:Yep - salt cod is traditional and makes an awesome fishcake, but these are haddock - 50/50 mix of haddock to potato. This is one of my new faves, using whatever fresh/frozen whitefish is on sale. I don't cook the fish first though, chunk it up and put it in raw.
