I bought a bottle of this because it looked interesting, and it is malt based. It SUCKS. It's unfermented malt extract, likely with yeast added, then pasteurized. Take heed.

He's got some really nice recipes in his Jerusalem cookbook too. And if you like to watch cooking shows bbc4 has about 40 episodes of his throughout the Middle East.
