Fuck that's some aging.
Nothing much special been cooked lately but I did drop off a wicked looking grass fed steer today. That summabitch is gonna hang for 14-17 days and then hit ma freezer. MooooooVember beef and wiener piggys be on the menu.

Bresaola is great. It's a lot brighter than the stuff you get around here in the restaurants. I used the recipe on the UMAi site but stepped up the fresh herbs a little. Like I would. :cheers2:

One of those dry-aged ribeyes smoked 30 minutes on RIS oak. Roast garlic, turnip, peppercorn, scallion and dill mash, golden beets, chili. Unfuckingrealdotcom. :cheers2:

Smoked some pork belly that's been curing for the last week today and tossed a handful of sausage on as well for pizza and pasta this coming week.
