2 yr Balderson @ Costco @ ~ $14.89 per kilo. For straight up cheddar it's a wicked price and wicked cheese. I've tried basically every other brand out there, nothing in the price range is close to the quality. Usually labelled with ~ 1 yr best before date so I buy a bunch at a time.

Gotcha. You've tried enzymes?

Neither really. Guanciale isn't smoked, I cured and smoked this one so it's basically jowl bacon

Yeah I tried the enzymes and prescriptions It helped for a while but not long term.

I thought it was smoked ? Either way jowls always a fucking treat!
