About as simple as you can get, at my mom's cottage anyway. Cut in fours, light olive oil, and whatever spice I can find. Today was a store bought curry powder. But I'll use anything and everything. Depending on my ability to watch over them, I'll put them on the bottom or top grill. Top cooks like an oven, with little fuss, nice and browned, but generally not as much grill lines.

I have relegated the bottom grill to things too big to close the cover on. The top is more stable and if you want grille marks crank it up and drop the food down for a sear.

Last nights pork butt turbo method, 350 ish for 5 hours just salt pepper and sprayed a couple of times with apple juice and some "dark rum". Pulled a little dry I don't think I should have foiled it but it was great in a salad last night and even better doused in home made mustard bbq sauce for lunch.

They were delicious and non-numbing. I used 1g hops per lb of meat and 1 ml of hop oil in the 20 lbs I had done. I used Double Hoppelganger in them as well!
The result: cannot taste hops. I'm sure they had an impact on overall flavour though. But.... the beer really, really came through! Overall, great beer sausage, not hoppy.
