The CUT burger of the day was extremely good. Swiss cheese, mushrooms, and an excellent smoked mayo. Juicy and tasteful. The Wagyu wasn't for me.
So tonight I did a Couscous salad with a grilled cut of Bison. Salad had Garlic (lots to the point of slight burn) Lentils, balsamic Vinegar, honey, oil, baby Bok Choy, and topped with fennel seeds.
Steak was seared at 600'F to medium rare.

just was planning on doing a dry rub and a little smoke. Got to try to keep it moist. It isn't very big and could dry out fast.

Whole beef tenderloin on for $9/lb AAA (at Barrington, today at least - they advertise AA or higher). I bought one for $67, have 11 x 1.25" - 1.75" thick beauties cut out of it, and 2 lbs of chain and trimmings for burger. Sweet deal :rockin: :cheers2:
