Beef ribs and brisket today. Low and slow, rubbed and left alone. I could hardly get pics of the brisket it was so good.

Maple leaf bacon was on sale for $3.50/lb so it's the perfect time for a little bacon weave action! Mmmm, Bacon Wellington! :lol: :lol:

Started with an 11.6 oz fillet, frozen solid...

Season the fillet while the grill is heating up...

Get the blast furnace scorching white-hot....

Give 'er a fast 'n furious sear right down on the coals...

Sear all sides....

Don't melt the camera....

Sear done. Still frozen solid in all but outer 10mm or so...

Brisket was del. Could have done a little better. Made a new heat deflector. With some mods it should make low and slow even better. I'm enjoying it as much as Luigi was today. Or as they say in New Ross " NOt BAAAAAAAAD" sorry old sheep joke!
Ribeyes look good, I liked the bacon weaves. I'm gonna do one again after I get through this mountain of brisket. Let the Brewnoser BBQ Wars Begin!

4.5 pounds of beef sliced up and marinating in my jerky recipe. I'll let it marinate overnight and put it on the hydrator tomorrow. Ya gotta love beef jerky! :headbang:

My first attempt at a pizza on the kamado. Tasted great.... even with the parchment paper fused to the bottom. Kids didnt notice so thats a bonus. :grilling:
