Beef ribs and brisket today. Low and slow, rubbed and left alone. I could hardly get pics of the brisket it was so good.

Looking tasty, TubberRoe!!!
Maple leaf bacon was on sale for $3.50/lb so it's the perfect time for a little bacon weave action! Mmmm, Bacon Wellington!
Started with an 11.6 oz fillet, frozen solid... Geared up a proper weave... Season the fillet while the grill is heating up... Get the blast furnace scorching white-hot.... Give 'er a fast 'n furious sear right down on the coals... Sear all sides.... Don't melt the camera.... Sear done. Still frozen solid in all but outer 10mm or so... Ready for some weave action.... All wrapped up, ready for some smoke....

MORE pepper...
Had some ground garlic and pork leftover so I made a fatty out of it and plowed it with Cajun Duct...
Wrapped....
Smoke the twins....
Fillet done....
Fatty done....
For the love of GAD....
Perfect medium I'd say, was shooting for med-rare...
Fatty inside....
Love to see this in a restaurant, sliced and served table-side. It's delicious....

Did you ever hear about the Kamado's???
There pretty nice from what I hear!
Thats Riiiight!
I've hit the wall at 160F on my brisket. Tomorrows supper is going to be awesome.
Of course it tastes better on a Kamado.

Re: The Official What's Cooking Thread [Food Porn]
Brisket was del. Could have done a little better. Made a new heat deflector. With some mods it should make low and slow even better. I'm enjoying it as much as Luigi was today. Or as they say in New Ross " NOt BAAAAAAAAD" sorry old sheep joke!
Ribeyes look good, I liked the bacon weaves. I'm gonna do one again after I get through this mountain of brisket. Let the Brewnoser BBQ Wars Begin!
