So it's not just the flat. If it's a full brisket, I'd say 8 hours at 250. Or use the quick brisket method. It's good.

Made some burgers tonite but had a few too many beers and forgot to take pics. 70% extra lean, 15% medium, 15% mild Italian sausage. Topped with pickled jalapeños from last summer, lettuce and blue cheese.
