Sure, I didn't really write anything down but this will put you in the ballpark...

1 - 2 tbsp olive oil
1-1/2 lb lean ground beef, turkey, chicken or pork
1 cup chopped onion
4 cloves garlic, minced
~ 1/2 bell pepper, diced
2 cans diced/stewed tomatoes
1 can black beans, drained and rinsed
1 can corn, with juice
1 or 2 cups chicken or veg stock (to preferred consistency)
3 tbsp (or so) chili powder
1 1/2 tbsp (or so) ground cumin
cayenne pepper, crushed dried chilies or jalapenos to your heat level
Salt and pepper to taste if needed
Serve with fresh cilantro garnish. Some people also use cheese, nachos, green onions or sour cream to garnish.

Saute the meat with the OO until near done, add onions for the last few minutes then add the garlic, saute for another minute or so (don't brown the garlic). Then basically add everything else, bring to a boil, reduce heat and simmer for about 1/2 hr. You can add a little more or less stock (or water) for consistency as well. :cheers2:
