Re: The Official What's Cooking Thread [Food Porn]
Please excuse the crappy phone pics...
Had a round roast in the slow cooker all day while at work. Cooked in a Mexican inspired sauce... large can of crushed tomatoes, onion powder, chile powder, cumin, couple pinches of cinnamon. Smells the place up nice.
I pulled the roast, mixed in some of the sauce, served on tortilla with some smoked jalapeno havarti and ranchero sauce. Cilantro would rock but I'm out. Thanks for the line on the cheese HP!

Re: The Official What's Cooking Thread [Food Porn]
Shane, it's super easy and I don't think I've ever used a recipe. After the fact I've discovered it's already a "thing". Tostadas are often made with meat like this, and I think it's similar to braised beef barbacoa.
I take a large can of crushed tomatoes, add a couple tablespoons of crappy no name brand chili powder (it contains mild chile powder, cumin, and other spices), 1 or 2 tsp of onion powder, some more cumin, and optionally some more exotic chile powders. I'll add a small amount of cinnamon too, it does something very unique. I add the meat, coat it in sauce and let it cook in the crock pot all day, remove a chunk, shred it with a fork like pulled pork, add some sauce, and voila. Don't be shy with the spices.
You can just serve the meat on tortillas alone or add all the fixins like you would for tacos or fajitas. It's way better than your standard taco ground beef IMO. Easier too.
I'll use any lean cut of meat, beef, pork, chicken, it doesn't matter. Usually what's on sale. I got a big chunk of sirloin roast on the weekend for about $8.00 at the Superstore and now I have leftovers for a couple of days including supper for my daughter tomorrow.

Awesome, thanks Rob! I bought a half side of beef from my next door neighbour's cattle farm so I've got lots of beef in the freezer. I'm 100% going to make when I get back from vacation! Thanks again man!
Oh, and I'm guessing a couple of nice home brews go very well with this meal!

You can buy pucks of mexican chocolate at Pete's. I've used them before, but they may just be chocolate with cinnamon....

I lied Rob, I'm not waiting until I get back from vacation to make these. I just took out a roast from the freezer and am going to make them tomorrow for supper.canuck wrote:RubberToe wrote:Shane, it's super easy and I don't think I've ever used a recipe. X, how are you controlling that temp there? Is that a PID and if so are you switching a fan on the intake or exhaust?

PID. Fan on the intake at the damper, topped with a little pile of snow in that pic, lol.

Re: The Official What's Cooking Thread [Food Porn]
A wee burger sear. This is about 15 minutes after lighting the charcoal, the cooker is still cold so the dome temp gauge still reads below 400 F. I "burped" it before fully opening the lid otherwise I would have lost a LOT of hair, like I did last Monday night
You can see the waft of flames come out at the 15-16 second mark.
Done.
Done.
