I kept my WSM and my gas when I got the Kamado. I use WSM and Kamado - gas may get sold.

In other news, I just pegged the dial on the kamado heating it up for some. It's not that bad, it was only a few minutes since I last checked on it when it was 550F. I just closed down the vents, now I'll get the pies ready. 4 firebricks and two pizza stones, all on the top rack this time...

Greg, when you're searing your steaks do you let the fire engulf it or do you let the coals burn until the flame isn't shooting up? I let mine burn for a bit but there was still a bit of flame there; it seemed to work out allright.

Epic hangover breakfast. Local duck eggs, double smoked bacon and some hashbrowns. Duck eggs have a ridiculously large yolk which I like. Not sure if I love the taste or not. Having a cold and being hung over are impeding my senses!
