Did you put it on the wood like Shawn suggests, or just toss some chunks into your charcoal?

IIRC, I kept a reasonable amount of smoke for about 2 hours, then went to bed.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

That's a nice looking cooker, I want to play with one. I wouldn't worry about the smoke leaks too much, they will likely seal up after a few cooks anyways. Ceramics usually puff here and there when they're new too. Regardless, the food looks great, good work for the break-in cook! :cheers2:

You should go to Walmart and grab a remote wireless thermometer for $20 for the brisket cook. Plus you should have a heat deflector and drip pan, I've seen the replacement Weber grates that fit at Home Depot in the bbq section. You can cook brisket direct though, I've done this one a few times, I like low'n slo better but this makes great brisket really fast:

I'm pretty sure those smoke leaks are from the screws on the lower sealing surface. That's not the greatest design, but they don't look like really bad leaks. The foiled brisket works well too.

I love it. The pizza stone on a lower rack is a must for temp stability. I don't have a lot to compare it too but I have been very happy with it.

Hey Guys:
I was going to buy the costco unit but found this thread. Thanks for the great info.I picked mine up monday am ,and by supper had three woodfired pizzas with breadmachine dough made with one of my beer.As the temp. dropped from 500 F to 200 F I dampered down and did two smoked salmon filets.
My wife as always been supportive of the brew hobby ,but even she was blown away by coming home to homemade beer and pizza with the fish on the side.
This unit is destined for the camp when the ice breaks up and I can boat it in. The durable design vs ceramic and the great price sealed the deal on this kamado.
Thanks for the great info and ideas.Can't wait to do some ribs with dry rub!

I'm thinking about picking one of these up this week. Has anyone found a good cover for this? Also, has anyone bought a rack to put down inside of it for a drip tray? If so, what size did you get?

I bought a cover from Amazon but it was frigging expensive. Couldn't find anything else to fit it sensible locally.
